Baked Apple Pancakes With Caramel Sauce Recipe

Ingredients
  •  Powdered sugar
  • 1/2 tsp ground cinnamon
  •  Vanilla ice cream
  • 3 tbsps granulated sugar
  • 1/2 c firmly packed brown sugar
  •  Vegetable cooking spray
  • 3 Granny Smith apples, peeled & thinly sliced
  • 1 1/2 c buttermilk
  • 1 tsp vanilla extract
  •  Chopped, toasted pecans
  • 8 large eggs
  •  Caramel Sauce
  • 1 c all-purpose flour
  • 1/2 c butter or margarine
  • 1/2 tsp salt
  • 1/2 c sliced pecans

Directions
  • Step #1 Whisk together eggs & next 4 ingredients.
  • Step #2 (Mixture will be lumpy.
  • Step #3 ) Add buttermilk & vanilla, whisking until batter is mixed.
  • Step #4 Coat 8 (7- x 4- x 1 1/2-inch) oval baking dishes with cooking spray.
  • Step #5 Place 1 tbsp butter in each dish.
  • Step #6 Bake at 425° for 3 to 4 mins or until butter melts.
  • Step #7 Place apple slices evenly into dishes; bake 5 more mins.
  • Step #8 Spoon about 1/2 c batter into each dish.
  • Step #9 Sprinkle top evenly with brown sugar & 1/2 c sliced pecans.
  • Step #10 Bake 20 more mins.
  • Step #11 Sprinkle top pancakes with powdered sugar, & sprinkle with sliced, & top this with a scoop of vanilla ice cream; drizzle with Caramel Sauce, toasted pecans.
