Turkish Pizza Recipe

Ingredients
  • 3/4 tsp kosher salt
  • 4 large eggs
  • 2 pitas, halved crosswise
  • 1/2 c Feta, crumbled
  • 8 stuffed grape leaves (optional)
  • 8 sprigs fresh mint (optional)
  • 1 tsp paprika
  • 1 bunch fresh spinach
  • 2 tbsps unsalted butter
  • 1/4 tsp plus 1/8 tsp black pepper
  • 2 tbsps olive oil

Directions
  • Step #1 Heat oven to 425° F.
  • Step #2 Place the pita halves, cut-side up, on a baking sheet.
  • Step #3 Brush with the oil & sprinkle with 3/4 tsp of the paprika; set aside.
  • Step #4 In a large skillet, over med-heat/flame, melt the butter.
  • Step #5 Add the spinach, tossing frequently, until the spinach has wilted, 1/2 tsp of the salt, & 1/4 tsp of the pepper & cook, about 2 mins.
  • Step #6 Divide the spinach among the pitas.
  • Step #7 Make a well in the center of each bed of spinach & crack 1 egg into the well.
  • Step #8 Spice up the egg with the remaining paprika, salt, & pepper & sprinkle with the Feta.
  • Step #9 Bake until the eggs are set, about 11 mins for runny yolks.
  • Step #10 Serve with the mint & stuffed grape leaves (if desired).
