Peggy Sue's Honey-cinnamon Date-nut Cake Recipe

Ingredients
  • 1/2 tsp salt
  •  Cooking spray
  • 1/4 c sliced walnuts, toasted
  • 1 tsp baking soda
  • 1/2 c applesauce
  • 1/2 c packed brown sugar
  • 1 c honey
  • 1/2 c granulated sugar
  • 1 c evaporated skim milk
  • 1 1/2 tsps ground cinnamon
  • 3 c all-purpose flour
  • 1/2 c stick margarine, softened
  • 1 c sliced pitted dates

Directions
  • Step #1 Preheat oven to 350°.
  • Step #2 Beat margarine & sugars at medium speed of a mixer until well-mixed (about 5 mins).
  • Step #3 Combine evaporated milk, honey, & applesauce; set aside.
  • Step #4 Combine flour, cinnamon, baking soda, & salt.
  • Step #5 Add flour mixture to margarine mixture alternately with honey mixture, beginning & ending with flour mixture.
  • Step #6 Stir in dates & walnuts.
  • Step #7 Pour batter into a 13 x 9-inch baking pan coated with cooking spray.
  • Step #8 Bake at 350° for 55 mins or until a wooden pick inserted in center comes out clean.
  • Step #9 Cool in pan on a wire rack.
