Olive Tea Sandwiches Recipe

Ingredients
  • 36 thin white bread slices
  • 1 (7.5-oz) jar pimiento-stuffed olives, drained & sliced
  • 1 c reduced-fat mayonnaise
  • 1 c toasted pecans, sliced
  • 1/2 small onion, sliced
  • 2 hard-cooked eggs, sliced

Directions
  • Step #1 Stir together first 5 ingredients.
  • Step #2 Cover up & chill 1 hr.
  • Step #3 Spread olive mixture on one side of 18 bread slices; top this with remaining bread slices.
  • Step #4 Trim crusts from sandwiches; cut each into triangles, or cut with decorative cookie cutters.
  • Step #5 Note: For testing purposes only, we used Pepperidge Farm Very Thin White Bread Slices.
