Cheddar Cheese Soufflé Recipe

Ingredients
  • 1 c (4 oz) shredded Cheddar cheese
  • 1/2 c soft breadcrumbs
  • 2 tsps butter or margarine
  • 3 large eggs, separated
  • 1 c milk
  • 1/8 tsp ground red pepper
  • 1/4 tsp salt

Directions
  • Step #1 Cook first 3 ingredients In a large-ish saucepan over medium-high heat, stirring constantly, until cheese melts.
  • Step #2 Remove from heat.
  • Step #3 Beat egg yolks until thick & pale.
  • Step #4 Gradually stir about one-fourth of hot mixture into egg yolks; stir in theto remaining hot mixture.
  • Step #5 Stir in breadcrumbs, salt, & pepper.
  • Step #6 Beat egg whites until stiff peaks form; fold into yolk mixture.
  • Step #7 Spoon into a 1-quart souffle dish.
  • Step #8 Bake at 325° for 50 mins or until puffed & golden.
