Southwestern Eggs Recipe

Ingredients
  • 8 oz tortilla chips
  • 2 16-oz jars salsa
  • 8 large eggs
  • 1/4 tsp kosher salt
  • 1/2 c sour cream
  • 1 avocado, sliced
  • 1/8 tsp black pepper
  • 1/4 c cilantro leaves

Directions
  • Step #1 Pour the salsa into a large nonstick skillet over med-heat/flame.
  • Step #2 Cover up & heat until warmed through.
  • Step #3 Break 1 egg into a small dish & slide it carefully into the salsa.
  • Step #4 Repeat with the remaining eggs.
  • Step #5 Spice up with the salt & pepper.
  • Step #6 Cover up & cook to the desired doneness.
  • Step #7 Divide the eggs & salsa among individual plates.
  • Step #8 Top with the avocado, sour cream, & cilantro & serve this with the chips.
