Cold Szechuan Noodles And Shreddedegetables Recipe

Ingredients
  • 16 oz dried soba noodles
  • 1 tbsp rice vinegar
  • 1 c sliced green onions
  • 1 tbsp white sugar
  • 2 carrots, julienned
  • 1/2 tsp chili oil
  • 1/4 c sesame oil
  • 1/4 c tamari
  • 1 red bell pepper, thinly sliced

Directions
  • Step #1 In a large stockpot, cook pasta in boiling salted water until al dente.
  • Step #2 Rinse with cool water; drain well.
  • Step #3 In a small bowl mix together 3 tbsps tamari sauce, vinegar, 3 tbsps sesame oil, sugar & Chili oil.
  • Step #4 Using tongs, toss noodles with sauce to coat well.
  • Step #5 Marinate in a covered bowl for 2 hrs, or up to 24 hrs, tossing every once in awhile.
  • Step #6 Bring marinated noodles to about room temp.
  • Step #7 Mix the remaining 1Tablespoon each of tamari & oil & pour over the noodles.
  • Step #8 Three hrs before serving stir in the sweet red peppers, two thirds of the green onions, & half of the grated carrots.
  • Step #9 To serve, mound the noodles on a serving platter & sprinkle with the remaining green onions & carrots.
