Tangerine-peel Chicken Szechuan
Ingredients
16 oz dried soba noodles
1 tbsp rice vinegar
1 c sliced green onions
1 tbsp white sugar
2 carrots, julienned
1/2 tsp chili oil
1/4 c sesame oil
1/4 c tamari
1 red bell pepper, thinly sliced
Directions
Step #1 In a large stockpot, cook pasta in boiling salted water until al dente.
Step #2 Rinse with cool water; drain well.
Step #3 In a small bowl mix together 3 tbsps tamari sauce, vinegar, 3 tbsps sesame oil, sugar & Chili oil.
Step #4 Using tongs, toss noodles with sauce to coat well.
Step #5 Marinate in a covered bowl for 2 hrs, or up to 24 hrs, tossing every once in awhile.
Step #6 Bring marinated noodles to about room temp.
Step #7 Mix the remaining 1Tablespoon each of tamari & oil & pour over the noodles.
Step #8 Three hrs before serving stir in the sweet red peppers, two thirds of the green onions, & half of the grated carrots.
Step #9 To serve, mound the noodles on a serving platter & sprinkle with the remaining green onions & carrots.
