Sourdough Waffles With Ham And Cheese Recipe

Ingredients
  •  Cooking spray
  • 1/2 c warm water (100° to 110°)
  • 2 1/2 c all-purpose flour, divided
  •  Sauce:
  • 1 large egg, lightly beaten
  • 1 1/2 c (6 oz) sliced Swiss cheese
  • 1 package dry yeast (about 2 1/4 tsps)
  • 6 tbsps maple syrup
  • 1 1/2 c (6 oz) sliced reduced-fat ham
  • 1 1/2 c warm fat-free milk (100° to 110°)
  • 1/2 tsp salt
  • 1 tbsp olive oil
  • 1 tbsp sugar
  • 3 tbsps Dijon mustard
  •  Waffles:

Directions
  • Step #1 Dissolve yeast in warm water in a small bowl; let this stand 5 mins.
  • Step #2 Add milk & oil, stirring with a whisk.
  • Step #3 Lightly spoon flour into dry measuring c; level with a knife.
  • Step #4 Combine 2 c flour & sugar in a small bowl.
  • Step #5 Add flour mixture to yeast mixture, stirring with a whisk until just mixd.
  • Step #6 Cover up & let this stand in a warm place (85°), free from drafts, 1 hr or until mixture is bubbly.
  • Step #7 Stir batter.
  • Step #8 Cover up & put in the fridge 24 hrs.
  • Step #9 Let batter stand at about room temp 20 mins (batter will be thick & spongy).
  • Step #10 Coat a waffle iron with cooking spray, & preheat.
  • Step #11 Stir batter; add 1/2 c flour, salt, & egg, stirring with a whisk.
  • Step #12 Add cheese & ham; stir well.
  • Step #13 Spoon about 1/2 c of batter onto hot waffle iron, spreading batter to edges.
  • Step #14 Cook 3 to 5 mins or until done; repeat procedure with remaining batter.
  • Step #15 To prepare sauce, mix syrup & mustard in a bowl; stir with a whisk.
  • Step #16 Serve with waffles.
