Ingredients
Cooking spray
1/2 c warm water (100° to 110°)
2 1/2 c all-purpose flour, divided
Sauce:
1 large egg, lightly beaten
1 1/2 c (6 oz) sliced Swiss cheese
1 package dry yeast (about 2 1/4 tsps)
6 tbsps maple syrup
1 1/2 c (6 oz) sliced reduced-fat ham
1 1/2 c warm fat-free milk (100° to 110°)
1/2 tsp salt
1 tbsp olive oil
1 tbsp sugar
3 tbsps Dijon mustard
Waffles:
Directions
Step #1 Dissolve yeast in warm water in a small bowl; let this stand 5 mins.
Step #2 Add milk & oil, stirring with a whisk.
Step #3 Lightly spoon flour into dry measuring c; level with a knife.
Step #4 Combine 2 c flour & sugar in a small bowl.
Step #5 Add flour mixture to yeast mixture, stirring with a whisk until just mixd.
Step #6 Cover up & let this stand in a warm place (85°), free from drafts, 1 hr or until mixture is bubbly.
Step #7 Stir batter.
Step #8 Cover up & put in the fridge 24 hrs.
Step #9 Let batter stand at about room temp 20 mins (batter will be thick & spongy).
Step #10 Coat a waffle iron with cooking spray, & preheat.
Step #11 Stir batter; add 1/2 c flour, salt, & egg, stirring with a whisk.
Step #12 Add cheese & ham; stir well.
Step #13 Spoon about 1/2 c of batter onto hot waffle iron, spreading batter to edges.
Step #14 Cook 3 to 5 mins or until done; repeat procedure with remaining batter.
Step #15 To prepare sauce, mix syrup & mustard in a bowl; stir with a whisk.
Step #16 Serve with waffles.
