Asparagus-spinach Pancakes Recipe

Ingredients
  • 1 c milk
  • 1/2 c all-purpose flour
  • 1/2 tsp kosher salt
  • 5 oz frozen sliced spinach, defrosted & squeezed
  • 3 tbsps freshly grated Parmesan
  • 1/3 c sour cream
  • 1/3 c olive oil
  • 1/4 lb asparagus, trimmed, peeled, & sliced
  • 3 eggs

Directions
  • Step #1 In a large bowl, whisk together the milk & eggs.
  • Step #2 Stir in the sour cream, asparagus, Parmesan, spinach, & salt.
  • Step #3 Add the flour & mix until well mixd.
  • Step #4 In a large skillet, over med-heat/flame, heat 1/3 of the oil.
  • Step #5 Make 4 pancakes (about 1/4 c of batter per pancake) & cook this until golden brown & slightly puffed, 2 to 3 mins per side.
  • Step #6 Working in batches, make a total of 12 pancakes, adding oil as necessary.
