Blueberry-cinnamon Muffins Recipe

Ingredients
  • 1 tsp vanilla extract
  • 1/2 c egg substitute
  • 1/4 c butter, softened
  • 1/2 tsp baking powder
  • 1 1/4 c fat-free buttermilk
  • 1 c fresh blueberries
  • 2 c all-purpose flour
  •  Vegetable cooking spray
  • 1/2 tsp salt
  • 1 c granulated sugar
  • 1 tsp ground cinnamon, divided
  • 1 tsp baking soda
  • 1/4 c regular oats
  • 2 tbsps brown sugar

Directions
  • Step #1 Stir together oats, brown sugar, & 1/2 tsp cinnamon; set aside.
  • Step #2 Beat butter & granulated sugar at medium speed with an electric mixer until fluffy.
  • Step #3 Add egg substitute, beating until mixed.
  • Step #4 Stir in vanilla.
  • Step #5 Combine all-purpose flour, & remaining 1/2 tsp cinnamon; add to butter mixture alternately with buttermilk, baking powder, baking soda, salt, ending with flour mixture.
  • Step #6 Gently stir in the blueberries.
  • Step #7 Spoon batter into muffin pans coated with cooking spray, filling two-thirds full.
  • Step #8 Sprinkle top evenly with oat mixture.
  • Step #9 Bake at 350° for 15 to 20 mins or until tops are golden.
  • Step #10 Cool muffins in pans 5 mins; remove this from pans, & cool on wire racks.
