Morning Glory Muffins Recipe

Ingredients
  • 1/2 tsp grated lemon rind (optional)
  • 1 (8-oz) can crushed pineapple in juice
  • 1/4 c milk
  • 1 to 2 tbsps fresh lemon juice (optional)
  • 1 c powdered sugar (optional)
  • 3/4 c shredded carrots
  • 2 large eggs
  • 3/4 c sliced toasted pecans
  • 1 (15.2-oz) package cinnamon streusel muffin mix
  •  Vegetable cooking spray
  • 1/2 tsp ground cinnamon
  • 3/4 c grated peeled Granny Smith apple (about 1 small apple)
  • 1/4 c vegetable oil
  • 1/2 c raisins

Directions
  • Step #1 Whisk together first 3 ingredients until mixed.
  • Step #2 Remove & reserve streusel packet from muffin mix package.
  • Step #3 Stir together contents of muffin mix packet & cinnamon In a large-ish bowl.
  • Step #4 Make a well in center of mixture.
  • Step #5 Add egg mixture, & next 4 ingredients, pineapple, stirring just until moistened.
  • Step #6 Place baking c in muffin pans.
  • Step #7 Spray with cooking spray.
  • Step #8 Spoon batter into c, filling two-thirds full.
  • Step #9 Sprinkle top evenly with reserved streusel packet.
  • Step #10 Bake at 425° for 18 to 23 mins or until golden.
  • Step #11 Cool in pans on wire racks 5 mins.
  • Step #12 Remove from pans, & cool on wire racks.
  • Step #13 Stir together powdered sugar, lemon rind, & drizzle over tops of muffins, & lemon juice until smooth, if desired.
  • Step #14 Note: For testing purposes only, we used Betty Crocker Cinnabon Cinnamon Streusel Premium Muffin Mix.
