Country Ham Eggs Benedict Recipe

Ingredients
  • 2 large eggs, lightly beaten
  • 2 tbsps vegetable oil
  • 1/4 tsp salt
  • 2 tsps baking powder
  • 1 (8.75-oz) can cream-style corn
  • 1/2 c all-purpose flour
  • 1 (12-oz) package thinly sliced country ham
  • 1 c yellow cornmeal
  • 8 large eggs, poached
  • 3/4 c buttermilk
  • 1 tsp sugar
  •  Swiss Cheese Sauce

Directions
  • Step #1 Brown country ham In a large-ish skillet over medium-high heat.
  • Step #2 Remove ham from skillet, & keep warm.
  • Step #3 Stir together cornmeal & next 4 ingredients In a large-ish bowl; make a well in center of mixture.
  • Step #4 Stir together 2 beaten eggs, & vegetable oil; add to dry ingredients, cream-style corn, buttermilk, stirring just until moistened.
  • Step #5 Pour about 1/4 c batter for each pancake onto a hot, lightly greased nonstick skillet.
  • Step #6 Cook pancakes until tops are covered with bubbles & edges look cooked; turn & cook other side.
  • Step #7 Top each pancake with 1 poached egg, country ham, & warm Swiss Cheese Sauce.
