Breakfast Tortilla Strata Recipe

Ingredients
  • 2 large egg whites
  • 10 (6-inch) corn tortillas, cut into 1-inch strips
  • 1 c bottled salsa
  • 1/2 tsp salt
  • 1 c canned black beans, rinsed & drained
  • 1 c low-fat sour cream
  • 1 c fat-free milk
  • 1 c (4 oz) preshredded reduced-fat Mexican mix or Monterey Jack cheese, divided
  • 1/4 c thinly sliced green onions
  •  Cooking spray
  • 2 large eggs

Directions
  • Step #1 Combine salsa & beans in a bowl.
  • Step #2 Place one-third of tortilla strips in an 11 x 7-inch baking dish coated with cooking spray.
  • Step #3 Top with 1/3 c cheese & about 1 c salsa mixture.
  • Step #4 Repeat procedure with one-third of tortilla strips, 1/3 c cheese, & remaining salsa mixture; top this with remaining tortilla strips.
  • Step #5 Combine sour cream & next 4 ingredients (sour cream through egg whites); stir with a whisk.
  • Step #6 Stir in onions.
  • Step #7 Pour over tortilla strips; sprinkle with 1/3 c cheese.
  • Step #8 Cover up & chill 8 hrs or overnight.
  • Step #9 Preheat oven to 350°.
  • Step #10 Remove dish from refrigerator.
  • Step #11 Let stand at about room temp 10 mins.
  • Step #12 Cover up & bake this at 350° for 20 mins.
  • Step #13 Uncover & bake an extra 15 mins or until lightly browned.
