Chickpea Falafel Burgers Recipe

Ingredients
  • 1 1/2 tbsps sliced fresh cilantro
  • 3 cloves garlic, sliced
  • 2 tbsps vegetable oil, or as needed
  • 1/2 c dry bread crumbs
  • 1 (15.5 oz) can garbanzo beans, with liquid
  • 2 green onions, sliced
  • 1 tbsp vegetable oil
  • 3/4 c sliced fresh mushrooms
  • 1 1/2 tbsps curry powder
  • 2 egg whites
  • 1/2 tsp ground cumin
  • 1 1/2 tsps minced fresh parsley

Directions
  • Step #1 Heat 1 tbsp of oil in a large skillet over medium-high heat.
  • Step #2 Add green onions & mushrooms, & fry until tender, stirring frequently.
  • Step #3 Combine the garbanzo beans (with liquid) & garlic in the container of a mixer or food processor/blender.
  • Step #4 Blend until smooth, & transfer to a medium bowl.
  • Step #5 Stir in the mushrooms & onions.
  • Step #6 Mix in the cilantro, parsley, curry powder & cumin.
  • Step #7 Add the bread crumbs & egg whites, & mix until thoroughly mixed.
  • Step #8 You can let the mixture sit in the refrigerator to mix flavors at this point, or go on to frying.
  • Step #9 Heat enough oil to cover the bottom of a large skillet over med-heat/flame.
  • Step #10 Form the bean mixture into 4 balls, & flatten into patties.
  • Step #11 Place the burgers in the hot skillet, & fry for about 5 mins on each side, until nicely browned.
