Pesto Lasagna (spinach & Cheese) Recipe

Ingredients
  • 16 oz shredded mozzarella cheese (6 c) .
  • 1 1/2 c onions, sliced .
  • 3 oz parmesan cheese, grated (3/4 c) .
  • 3 garlic cloves, finely sliced .
  • 30 oz frozen sliced spinach, thawed & squeezed dry .
  • 1 1/2 c pesto sauce .
  • 1 (16 oz) package lasagna noodles, partially cooked according to package directions .
  • 24 oz ricotta cheese (3 c) .
  • salt, to taste .
  • 1/2 c pine nuts, toasted .
  • 3 tbsps olive oil .
  • pepper, to taste

Directions
  • Step #1 Preheat oven to 350°F.
  • Step #2 Oil 13"x9" casserole dish.
  • Step #3 In a large skillet, heat olive oil.
  • Step #4 Sauté onion & garlic until onion is transparent.
  • Step #5 Add spinach; cook, stirring constantly for 5 mins.
  • Step #6 Spice up with salt & pepper.
  • Step #7 Transfer to a large bowl.
  • Step #8 Add ricotta, Parmesan, pesto, & pine nuts to spinach; mix well.
  • Step #9 Layer 5 lasagne noodles in bottom of casserole dish, slightly overlapping each other.
  • Step #10 Top with 1/3 of spinach mixture & 1/3 of mozarella cheese.
  • Step #11 Repeat layers twice.
  • Step #12 Bake until hot & bubbly (35 mins).
