Green Pepper Meatloaf Recipe

Ingredients
  • 1 (1 1/4 oz) envelope onion soup mix .
  • 1/4 c minced fresh parsley .
  • 1 lb bulk pork sausage (mild, medium, or hot, depending on your taste) .
  • 2 medium green peppers, sliced .
  • 4 slices bacon (optional) .
  • 2 lbs ground beef .
  • 1/4 c sliced celery leaves .
  • 2 eggs, lightly beaten .
  • 1 large onion, finely sliced

Directions
  • Step #1 In a large bowl, mix eggs, gr.
  • Step #2 peppers, parsley, celery leaves, onion, & soup mix.
  • Step #3 Crumble beef & sausage over the mixture & mix well.
  • Step #4 Shape into a 12-inch x 4-inch loaf.
  • Step #5 Place on a rack in a shallow baking pan.
  • Step #6 Bake uncovered, at 350 degrees for one hr.
  • Step #7 Place bacon strips over top, if desired.
  • Step #8 Bake 45 to 60 mins longer or until no pink remains & meat thermometer reads 160 degrees.
