Black Olives Recipe

Ingredients
  • 2-3 sprigs thyme .
  • 125 ml olive oil .
  • 125 ml white wine vinegar .
  • 2-3 hot chili peppers .
  • 2 kg raw olives .
  • 4 garlic cloves .
  • 280 g coarse salt .
  • 15 ml pickling spices

Directions
  • Step #1 Slit the olives down one side.
  • Step #2 Cover up with cold water & leave to soak for 17 days to eliminate bitterness.
  • Step #3 Change the water every day, then soak in salt water for 3 days, stirring every once in awhile.
  • Step #4 You make the salt water by mixing the salt with enough water so an egg will float in the brine solution.
  • Step #5 Drain, then soak for 3 days in 1 part vinegar & 2 parts water, making sure the olives are covered at all times.
  • Step #6 Drain & add the garlic, pickling spice, chillies & thyme.
  • Step #7 Pack in sterile jars & pour on olive oil to cover.
  • Step #8 Seal & leave for at least 4 weeks.
  • Step #9 The oil will take on an olive taste & can be used in salads.
