Step #3 Combine the soy sauce, add the chicken pieces, ginger, garlic, lemon juice, rum, & bay leaf in a bowl or zipper bag, & let marinate at least 4 hrs in the refridgerator (overnight is best).
Step #4 Combine the flour, & pepper, salt, & put on a plate or waxed paper for dredging.
Step #5 In an electric fryer, or on the stove, heat the vegetable oil to 375 degrees.
Step #6 Once the oil has reached the correct temperature, dredge the chicken 4-5 pieces at a time, & fry until crisp & golden brown.
Step #7 The time will depend on the size of the chicken.
Step #8 As you complete each batch, remove the cooked pieces to a rack to drain, & dredge & fry the next batch.
Step #9 Serve with rice & beans.
Step #10 A salad is good here, too.
