Chickpeas & Chorizo (beans And Sausage) Recipe

Ingredients
  • 3-4 chorizo sausages, sliced .
  • 2 tbsps finely sliced parsley .
  • pepper .
  • 2 red bell peppers, deseeded & cut in to chunks .
  • 2 tbsps extra virgin olive oil .
  • 400F g chickpeas, rinsed & drained .
  • salt .
  • 2 red onions, peeled & thickly sliced

Directions
  • Step #1 Saute onions in oil In a large-ish pan or wok over med-heat/flame for 5 mins.
  • Step #2 Add the sliced peppers & cook for 10 mins, stirring every once in awhile.
  • Step #3 Move the vegetables to one side of the pan.
  • Step #4 Add the sliced chorizo to the cleared space & brown on both sides.
  • Step #5 Cook chorizo for 10 mins or until cooked through, stirring every once in awhile.
  • Step #6 Add chickpeas & mix together.
  • Step #7 When heated through season this with the salt & pepper to taste.
  • Step #8 Serve.
