Tomato, Zucchini And Feta Gratin Recipe

Ingredients
  • 1 tsp thyme, minced .
  • 3 roma tomatoes .
  • 2 garlic cloves, minced .
  • 4 oz feta cheese, crumbled .
  • 1 large zucchini .
  • salt .
  • 3 tbsps olive oil .
  • pepper

Directions
  • Step #1 Slice zucchini into 1/2" rounds.
  • Step #2 Blanch zucchini in boiling water for 4 mins.
  • Step #3 Drain well, & pat dry.
  • Step #4 Slice tomatoes, lengthwise, into 4 slices per tomato.
  • Step #5 With a spoon remove seeds.
  • Step #6 In a greased 9x9 glass baking dish, overlapping, place zucchini, in a single layer to cover bottom of dish.
  • Step #7 Drizzle zucchini with 1 tbsp of olive oil over top.
  • Step #8 Sprinkle top with with garlic, thyme, salt & pepper.
  • Step #9 Next add a layer of crumbled feta.
  • Step #10 Top dish with tomatoe slices.
  • Step #11 Sprinkle top with salt & pepper.
  • Step #12 Drizzle all of cassarole with remaining oil.
  • Step #13 Bake, in preheated, 400F degree oven for 40 mins.
  • Step #14 Remove & let rest 10mins before serving.
