Step #1 In a big skillet, cook potatoes in hot oil over med-heat/flame for 6 to 10 mins or until nearly tender, stirring frequently.
Step #2 Add in spaghetti sauce, peas & carrots, & corn; stir this to mix.
Step #3 Bring to a boil; lower heat, cover, & let simmer for 5-7 mins or until vegetables are tender.
Step #4 Spice up to taste with salt/pepper.
Step #5 Sprinkle top with cheese; let this stand, covered, for about 1 min or until cheese starts to melt.
Step #6 **An alternative is to use 1 c tomato sauce & 1 c salsa in place of the spaghetti sauce.
