Indonesian Coleslaw Recipe

Ingredients
  • 4 c cabbage, shredded .
  • 1 serrano pepper or jalapeno chile, seeded & inced .
  • 2 garlic cloves, minced .
  • 3 tbsps cilantro, sliced .
  • 1 cucumber, seeded & sliced in thin 1/2 moons .
  • 1 tbsp sugar .
  • 1 c dry roasted peanuts, coarsely sliced .
  • 1/3 c rice vinegar .
  • 1 tsp curry powder .
  • 1/3 c salad oil .
  • 4 green onions or scallions, sliced thin

Directions
  • Step #1 Toss cabbage, green onions & cucumber together in large non-reactive bowl.
  • Step #2 Keep chilled while preparing dressing.
  • Step #3 Combine chili, sugar, curry powder, garlic, oil & vinegar in covered container.
  • Step #4 Whisk or shake to mix.
  • Step #5 Just before serving add peanuts & cilantro to the cabbage, pour dressing over all, toss lightly to mix.
  • Step #6 Salad does not keep well for very long, so do not dress until just prior to serving.
  • Step #7 It doesn't actually go bad, but the peanuts & cabbage soften & it's just not as good as fresh made.
  • Step #8 If taking to a pot luck or similar affair, I bring the dressing in a separate container to add at the last min.
