Step #1
In a large bowl, eggs, brown sugar, cherries, plums, apple, raisins, currants, golden raisins, stem ginger, ground almonds, carrot, mixed peel, mix flour, mixed spice, sliced blanched almonds, lemon juice & zest, suet, bread crumbs, baking powder & ale.
Step #2 Let each family member take a turn stirring & make a wish.
Step #3 If you have used more dry fruit than fresh, add a little extra ale to make the mixture less stiff.
Step #4 Grease 2 large or 4 small pudding basins.
Step #5 Fill with pudding mixture about 7/8 full.
Step #6 Cover tightly with greased waxed paper, then foil; secure with string.
Step #7 Stand pudding on a trivet in a large pot of boiling water that reaches halfway up the sides of the pudding basin.
Step #8 Steam puddings over medium-low heat in boiling water 10 hrs for large puddings, 5 hrs for small puddings, topping off water regularly until quite firm & set.
Step #9 If not serving as soon as possible, dry place, then replace covers with fresh waxed paper & foil & store this in a cool, let cool completely, basting from time to time with rum or brandy, for up to 3 months.
