Berry Crumb Cake Recipe

Ingredients
  • 2 large eggs .
  • 1 tsp ground cinnamon .
  • 2 tbsps confectioners' sugar .
  • CRUMB TOPPING .
  • 2 tbsps sliced crystallized ginger, sliced .
  • 2 c flour .
  • 2 c berries .
  • 1 (16 oz) box lbcake mix .
  • 1 tsp freshly grated orange zest .
  • 1/2 c milk .
  • 3/4 c butter, melted .
  • 1/2 c sour cream .
  • 2/3 c packed dark brown sugar .
  • 3/4 tsp cinnamon

Directions
  • Step #1 Preheat oven to 350°.
  • Step #2 Line 9-inch square pan with enough aluminum foil wrap to over hang all sides by 2-inches.
  • Step #3 Spray with cooking spray.
  • Step #4 At lowish speed beat lbcake mix, eggs, milk, sour cream & cinnamon until mixed.
  • Step #5 Increase speed to medium; beat until batter is light & fluffy about 3 mins.
  • Step #6 Fold in berries, ginger & orange zest.
  • Step #7 Spread batter in pan.
  • Step #8 Bake for 20 mins.
  • Step #9 TOPPING: Combine flour, brown sugar & cinnamon.
  • Step #10 Stir in butter.
  • Step #11 Squeeze mixture together to form crumbs.
  • Step #12 Sprinkle top evenly onto hotcake.
  • Step #13 Return cake to oven for 30 mins or until toothpick inserted into center comes out clean & cake is golden brown.
  • Step #14 Cool in pan on wire rack for 10 mins.
  • Step #15 Using foil wrap to lift cake from pan.
  • Step #16 Cool completely.
  • Step #17 Sprinkle top with confectioners sugar.
