Step #1 Wash & drain the lentils, to taste, adding salt & pepper, place them in a pan with water to cover & let simmer for 30 mins or until they are very tender, towards the end of the cooking time.
Step #2 Wash the spinach thoroughly, remove the stems, chop the leaves coarsely, & add them to the lentils.
Step #3 Sauté the onions & garlic in oil until soft, add the flour & stir well.
Step #4 Add a c of water & stir until this sauce thickens; then pour the sauce into the soup.
Step #5 Add the lemon juice & more water, if necessary, & let simmer until the soup is thick.
Step #6 Serve very hot.
