Diabetic Blueberry Jam Recipe

Ingredients
  • 3/8 c water .
  • 12 oz unsweetened blueberries, thawed .
  • 8 tsps artificial sweetener .
  • 2 tbsps cornstarch

Directions
  • Step #1 In a heavy saucepan bring blueberries & 1/4 c water to a boil.
  • Step #2 Cover up.
  • Step #3 Reduce heat & let simmer til berries are soft.
  • Step #4 Dissolve cornstarch in remaining water.
  • Step #5 Add to blueberries & stir until jam thickens.
  • Step #6 Remove from heat.
  • Step #7 Cool slightly.
  • Step #8 Add artificial sweetener.
  • Step #9 Mix.
  • Step #10 Serve warm or chilled.
