Cabbage And Apple Kugel For Passover Recipe

Ingredients
  • 6 tbsps margarine .
  • 6 eggs, separated .
  • 1/2 tsp salt .
  • 1/2 c matzo meal .
  • 2 medium apples, peeled, sliced .
  • 1 head green cabbage, shredded .
  • 1 tbsp lemon juice .
  • 2 tbsps sugar

Directions
  • Step #1 Put cabbage in boiling salted water(1/2 tsp per c of water) & let simmer until tender, about 25 mins.
  • Step #2 Drain & run cold water over it to cool.
  • Step #3 With paper towels, squeeze dry by the handful & place this in a mixing bowl.
  • Step #4 Add egg yolks, lemon juice, margarine, sugar, apples & salt.
  • Step #5 Stir in the matzoh meal.
  • Step #6 Beat the egg whites until stiff & fold into the cabbage mixture.
  • Step #7 Pour into a greased casserole.
  • Step #8 Place in a preheated oven at 350 degrees.
  • Step #9 Bake for 1 hr.
