Peppercorn Crusted Filet Mignon With Port Jus Recipe

Ingredients
  • 1/2 c port wine .
  • 2 tsps cracked black pepper .
  • 16 oz beef tenderloin steaks, trimmed .
  • 1/4 tsp salt .
  • 1/2 c fat free low-sodium beef broth .
  • 1 tbsp butter, chilled

Directions
  • Step #1 The beef should be cut into four 4 oz servings one inch thick.
  • Step #2 If you can't find a good port use a sweet red wine.
  • Step #3 cut the butter into small pieces.
  • Step #4 Heat a cast iron skillet over medium high heat.
  • Step #5 Rub pepper evenly over steaks.
  • Step #6 Sprinkle top the salt in the pan.
  • Step #7 Add steaks & cook 2 mins each side or until browned.
  • Step #8 Remove steaks & set aside.
  • Step #9 Stir in port & broth & scrape pan to remove browned bits.
  • Step #10 Reduce heat to medium & return steaks to pan then cook for 2 mins each side or until done as you desire.
  • Step #11 Remove steaks from pan.
  • Step #12 Add butter to pan.
  • Step #13 Stir with whisk until melted.
  • Step #14 Drizzle sauce over steaks.
  • Step #15 1 tbsp jus for each steak.
