Roasted Bell Pepper & Artichoke Quiche Recipe

Ingredients
  • 1/2 c roasted sweet peppers (type found in a jar, drain & rinse off oil before cutting into small pieces) .
  • 14 oz artichoke hearts (type found in can, drain off liquid) .
  • 1/2 c fresh parmesan cheese, grated .
  • 5 eggs or 1 (16 oz) carton egg substitute .
  • 1 (9 inch) flaky pie crusts, baked partially .
  • 1 tbsp fresh basil .
  • 1 1/2 c monterey jack cheese, grated (Can use a mix of jack & mild cheddar also) .
  • salt & pepper (to taste) .
  • 1/2 c half-and-half cream .
  • 2 garlic cloves, minced

Directions
  • Step #1 Whisk the eggs, garlic, half & half, salt & pepper together in bowl & set aside.
  • Step #2 Sprinkle top the Jack cheese over the partially cooked pie crust.
  • Step #3 Distribute evenly over the cheese the roasted pepper, artichoke, & basil.
  • Step #4 Pour the egg mixture over all.
  • Step #5 Top with the Parmesan cheese.
  • Step #6 Bake in a 350 degree oven for one hr or until a inserted knife comes out clean.
  • Step #7 Let cool for about 10 mins before cutting.
  • Step #8 Serve warm.
