Orange Cheesecake With Cranberry Topping Recipe

Ingredients
  • 1/2 c sugar .
  • 1/4 c sugar .
  • 1/4 c butter or margarine, melted .
  • 4 eggs, slightly beaten .
  • 1 (12 oz) package fresh cranberries .
  • 1 1/2 c sugar .
  • 1/2 c orange marmalade .
  • Topping .
  • Cake .
  • 20 graham cracker squares, finely ground (2 & 1/2 inch, 1 c) .
  • 1 1/2 c sour cream .
  • 1 tbsp grated orange peel .
  • For crust .
  • 2 egg yolks .
  • 2 (8 oz) packages cream cheese, at about room temp

Directions
  • Step #1 Crust:.
  • Step #2 Combine cracker crumbs, sugar & butter.
  • Step #3 Press into bottom & sides of 10" springform pan.
  • Step #4 Wrap outside of pan with double layer of foil wrap.
  • Step #5 Refrigerate 15 mins.
  • Step #6 Cake:.
  • Step #7 Preheat oven to 325.
  • Step #8 Beat at high speed cream cheese with sugar til smooth.
  • Step #9 Beat in sour cream & orange peel until mixd.
  • Step #10 Pour batter into crust.
  • Step #11 Place in large roasting pan on oven rack.
  • Step #12 Fill pn with water 1/2 the way up side of springform pan.
  • Step #13 Bake 1 hr 20 mins or until center is set.
  • Step #14 Remove from water & foil wrap.
  • Step #15 Cool in pan on rack one 1 hr.
  • Step #16 Refrigerate 4 hrs or over night.
  • Step #17 Topping:.
  • Step #18 In pot, mix cranberries, sugar & marmalade.
  • Step #19 Over medium heat cook til mix simmers & cranberries start to burst 6-8 mins.
  • Step #20 Remove from heat, cool completely.
  • Step #21 Transfer to covered container & put in the fridge until ready to use.
  • Step #22 Remove cake from fridge 1 hr before serving.
  • Step #23 Remove side of pan.
  • Step #24 Transfer cake to serving plate.
  • Step #25 Serve spread with topping.
