Ingredients
For topping .
1 garlic clove, peeled (for coating casserole dish) .
1/4 c grated parmigiano-reggiano cheese .
8 oz grilled Italian sausage (cut in 1/4 inch slices, can be hot or sweet sausage) .
salt, to taste .
1 tbsp butter, melted .
1 1/2 lbs macaroni, & shells .
1/2 c breadcrumbs .
4 oz unsalted butter .
For cheese sauce .
1 lb American cheese, slices (white or yellow) .
1 quart milk .
1 c heavy cream .
pepper, to taste .
Rest of ingredients .
1 tbsp onions, finely minced .
ground nutmeg, to taste .
4 oz all-purpose flour
Directions
Step #1 To prep before, make light roux; melt the 4 oz butter in heavy bottomed pan, slowly add the flour & stir until mixd & smooth.
Step #2 Cook over med-heat/flame until just golden brown; set aside.
Step #3 Grill sausages or bake in oven & set aside.
Step #4 Preheat oven to 350 degrees.
Step #5 In large pot, boil water & cook macaroni al dente.
Step #6 While pasta cooks, heat oil In a large-ish skillet & add onions.
Step #7 Saute onions over low heat/flame, stirring frequently.
Step #8 Add the roux to the onions & add the milk slowly, whisking to work out any lumps.
Step #9 Bring sauce to a full boil, then reduce heat & add cheese one slice at a time.
Step #10 Simmer until smooth & thickened.
Step #11 Adjust seasoning to taste with salt, pepper & nutmeg.
Step #12 Strain through a fine-mesh colander, if desired.
Step #13 Add heavy cream & let simmer to a good flavor & consistency.
Step #14 Rub an ovenproof casserole dish with the garlic, then add the macaroni, sliced sausage & sauce; mix well.
Step #15 In a small bowl, mix melted butter & bread crumbs & sprinkle mixture on top.
Step #16 Cover up with foil wrap & bake for 35 mins.
Step #17 Then take foil wrap off, add grated cheese & cook uncovered for an extra 5 mins.
Step #18 Let rest before serving.
