Chi Chi Dango Recipe

Ingredients
  • 2 c water .
  • 1 (12 oz) can frozen coconut milk, thawed .
  • 2 1/2 c sugar .
  • red food coloring .
  • cornstarch or potato starch .
  • 4 c mochiko sweet rice flour .
  • 1/2 tsp baking powder

Directions
  • Step #1 Combine all ingredients, beat with mixer (lowish speed) or wire whip until smooth & all lumps dissolve.
  • Step #2 Add red food coloring to desired tint.
  • Step #3 Generously grease a 9 x 13" pan.
  • Step #4 Pour into pan & bake 1 hr at 325F degrees.
  • Step #5 Turn oven off but let sit another 15 mins Cool.
  • Step #6 Cut into strips, roll in potato starch or cornstarch.
  • Step #7 Cut into small rectangular pieces with saran wrap covered knife for easier cutting.
