Ingredients
2 c water .
1 (12 oz) can frozen coconut milk, thawed .
2 1/2 c sugar .
red food coloring .
cornstarch or potato starch .
4 c mochiko sweet rice flour .
1/2 tsp baking powder
Directions
Step #1 Combine all ingredients, beat with mixer (lowish speed) or wire whip until smooth & all lumps dissolve.
Step #2 Add red food coloring to desired tint.
Step #3 Generously grease a 9 x 13" pan.
Step #4 Pour into pan & bake 1 hr at 325F degrees.
Step #5 Turn oven off but let sit another 15 mins Cool.
Step #6 Cut into strips, roll in potato starch or cornstarch.
Step #7 Cut into small rectangular pieces with saran wrap covered knife for easier cutting.
