Tibetan Spring Soup
Ingredients
3 tbsps fresh gingerroot, grated .
4 c shredded cabbage .
1 1/2 c seitan .
6 flour tortillas .
2 c thin sliced onions .
2 c peeled grated carrots .
2 tbsps vegetable oil .
2 tsps asian chili paste, to taste .
1 tsp dark sesame oil .
2 tbsps minced garlic .
1 tsp salt
Directions
Step #1 Cut the Seitan into strips 1 by 1/2 inch.
Step #2 Preheat oven to 350°F Grease a 8 inch baking dish.
Step #3 Saute the onions until just soft [for about 5 mins.
Step #4 ] Add garlic, ginger & salt & cook for a min or two more.
Step #5 Add the cabbage & cook this until the cabbage is limp.
Step #6 Stir frequently.
Step #7 Now add the chili paste, carrots & seitan.
Step #8 Cook until vegetables soft & brown [about 10 mins] If needed add water or broth to preent sticking.
Step #9 When you finish sprinkle the sesame oil over the vegetables & remove this from heat.
Step #10 Divide filling & place this in tortillas.
Step #11 Roll & place seam down in baking dish.
Step #12 Cover up tightly with foil wrap & bake for 15 mins or until hot.
Step #13 Serve ASAP.
