Chicken With Walnuts, Bell Peppers (capsicum) And Green Onions Recipe

Ingredients
  • 1 tsp sugar (use more if you like sweet) .
  • 2 1/4 lbs chicken breasts, sliced into one-inch pieces (I have made this with chicken thigh meat & it works fine) .
  • 5 tsps cornstarch (cornflour) .
  • 6 tbsps Chinese wine or dry sherry or water .
  • 1 tbsp fresh ginger, sliced finely .
  • 2 tbsps water .
  • 2-4 tbsps vegetable oil .
  • 1/4 tsp red chili pepper flakes .
  • 9 tbsps soy sauce .
  • 10 green onions, sliced into one-inch slices (use white & green bits) .
  • 2 large green bell peppers, sliced into one-inch pieces (red peppers are okay if that is what you have) .
  • 1 1/4 c walnuts, halves broken in half again (or more)

Directions
  • Step #1 Chop chicken, bell peppers, walnuts, green onions & ginger.
  • Step #2 I sometimes do this in the morning (or the night before), & put the components in the refrigerator, in covered containers.
  • Step #3 If you chop ahead of time, store chicken on its own, store onions & peppers together, store walnuts on their own, & store ginger on its own.
  • Step #4 If you chop ahead of time, take all items out of fridge at least two hrs before final cooking.
  • Step #5 For sauce, put cornstarch into bowl.
  • Step #6 Stir in soy sauce.
  • Step #7 Stir in Chinese cooking wine (or substitutes), ginger, chilli & sugar.
  • Step #8 Don't add water yet.
  • Step #9 Set aside.
  • Step #10 Do all cooking in a wok if you can.
  • Step #11 Saute bell peppers & onions in two tbsps oil for two mins.
  • Step #12 Stir frequently.
  • Step #13 Remove from heat, & set aside.
  • Step #14 Saute walnuts in same pan for one min (don't add more oil yet).
  • Step #15 Stir frequently.
  • Step #16 Remove from heat, & set aside.
  • Step #17 Saute half the chicken pieces in same pan until cooked (first add two tbsps of oil).
  • Step #18 Stir frequently.
  • Step #19 Remove from heat, & set aside.
  • Step #20 Saute other half of chicken pieces until cooked (probably don't add more oil).
  • Step #21 Stir frequently.
  • Step #22 Add first set of chicken pieces to second set of pieces.
  • Step #23 When chicken is hot, add soy sauce mixture.
  • Step #24 Pour water into pan used for soy sauce mixture.
  • Step #25 Swirl in pan & add to chicken.
  • Step #26 Stir well.
  • Step #27 When mixture thickens (just a bit) add vegetables.
  • Step #28 Stir thoroughly & warm through.
  • Step #29 Might take a min, covered.
  • Step #30 Serve over rice.
