Fettuccine With Prosciutto, Tomatoes, And Cream Recipe

Ingredients
  • 3 garlic cloves, pressed .
  • 1/2 c coarsely sliced fresh Italian parsley .
  • 3 (14 1/2 oz) cans petite sliced tomatoes with juice, drained .
  • 3 tbsps olive oil, divided .
  • parmesan cheese, for serving .
  • 1 lb fettuccine .
  • 6 oz thinly sliced prosciutto, cut into 1-inch wide strips .
  • 1/2 c grated parmesan cheese, plus extra .
  • 1/2 c whipping cream

Directions
  • Step #1 Cook pasta in large pot of boiling salted water until tender but still firm to bite, stirring every once in awhile.
  • Step #2 Drain.
  • Step #3 Transfer pasta to large bowl.
  • Step #4 Meanwhile, heat 1 tbsp oil in heavy large skillet over medium-high heat.
  • Step #5 Add prosciutto & sauté until crisp, about 5 mins.
  • Step #6 Transfer prosciutto to paper towels.
  • Step #7 Add remaining 2 tbsps oil to same skillet.
  • Step #8 Add garlic & sauté 15 seconds.
  • Step #9 Add tomatoes & let simmer 5 mins, stirring every once in awhile.
  • Step #10 Stir in cream, parsley, & 1/2 c cheese.
  • Step #11 Bring to boil; season this with salt & pepper.
  • Step #12 Add sauce to pasta in bowl; toss to coat.
  • Step #13 Sprinkle top with prosciutto & serve, passing extra cheese alongside.
