Chicken Caesar Salad Recipe

Ingredients
  • 4 slices bacon .
  • 1 garlic clove, crushed .
  • 1 tsp Dijon mustard .
  • 1 baguette, cut into 12 x 1 cm thick slices .
  • 20 g parmesan cheese, shaved .
  • 1/2 tsp Worcestershire sauce .
  • 1 garlic clove, halved .
  • 80 ml olive oil .
  • 4 chicken breast fillets, trimmed .
  • 1 egg yolk .
  • 2 baby cos lettuce, well washed & drained .
  • 125 ml oil .
  • anchovies, extra (optional) .
  • 3 anchovy fillets .
  • 1 tbsp lemon juice

Directions
  • Step #1 Put the egg yolk, garlic, anchovy fillets & Dijon mustard in a food processor/blender & mix them together.
  • Step #2 With the motor running, slowly add the oil in a thin stream & process until the mixture becomes thick.
  • Step #3 Stir in the lemon juice, Worcestershire sauce & Parmesan & season this with salt & pepper to taste.
  • Step #4 Put chicken breasts in a bowl with 1 tbsp of olive oil, season this with salt & pepper & turn so they are coated in oil.
  • Step #5 Brush baguette slices with remaining olive oil & toast on barbecue plate for 1 min each side until crisp & marked.
  • Step #6 Rub both sides of each piece with the cut clove of garlic & keep them warm.
  • Step #7 Grill chicken on chargrill plate for 5 mins on each side or until cooked through.
  • Step #8 Leave to rest for 1 min then cut into 1 cm strips.
  • Step #9 Cook bacon for 3 mins on each side or until crispy then break into 2 cm pieces.
  • Step #10 Tear Cos leaves into bite-sized pieces & toss in large bowl with dressing, bacon & chicken.
  • Step #11 Serve with garlic croutons & let people add extra anchovies to taste.
