Cranberry Orange Bread Recipe

Ingredients
  • 1 tsp salt .
  • 1/2 tsp baking powder .
  • 2/3 c vegetable oil .
  • 2 tsps grated orange peel (optional) .
  • 1/3 c orange juice, pre-made .
  • 1 2/3 c sugar .
  • 1/3 c whole milk .
  • 2 tsps baking soda .
  • 4 large eggs .
  • 1 (6 oz) package orange-flavored craisins, ocean spray brand .
  • 2 tsps vanilla .
  • 3 c flour .
  • 1/2 c nuts (optional)

Directions
  • Step #1 Mix together Craisins, milk, orange juice & eggs (& orange peel, vegetable oil, vanilla, if used, sugar, at this point) In a large-ish bowl by hand.
  • Step #2 Stir in remaining ingredients until mixed well.
  • Step #3 Place batter into well-greased loaf pans; dividing equally.
  • Step #4 Bake in a pre-heated 350 degree oven for approximately 45-60 depending on the size of the pans used.
  • Step #5 Loaves are done when toothpick inserted into the middle of the loaf comes out clean.
  • Step #6 Do not over-bake.
  • Step #7 Take out of oven & cool on a wire rack for 10 mins before removing from pan.
  • Step #8 Loaves may be wrapped & stored in refrigerator for up to 10-days.
