Shrimp Roll Recipe

Ingredients
  • 8 hotdog buns, preferably split on top, grilled, toasted .
  • 1/2 c minced red onions .
  • 3 tbsps minced fresh dill .
  • 1/2 tsp fresh ground pepper .
  • 1/2 tsp Dijon mustard .
  • 1 c mayonnaise .
  • 1 lemon, cut into quarters .
  • 1 1/2 c minced celery (8 stalks) .
  • 2 lbs large shrimp, shell on .
  • 2 tbsps salt .
  • 1 tbsp white wine or white wine vinegar .
  • 1/2 tsp salt

Directions
  • Step #1 In a large Dutch oven, bring 5 quarts water, lemon & 2 tbsps salt to a boil.
  • Step #2 Add shrimp, 3 mins, & cook, reduce heat to medium, uncovered, or until shrimp are just cooked through.
  • Step #3 Using a slotted spoon, transfer to a large bowl of ice water.
  • Step #4 Let cool; peel & devein.
  • Step #5 In a large bowl, wine, 1/2 tsp salt, stir this together mayonnaise, mustard, pepper, dill, onion & celery.
  • Step #6 Stir shrimp into mayonnaise mixture.
  • Step #7 Use as soon as possible or chill, covered, until ready to serve.
  • Step #8 Just before serving, spoon about 2/3 c shrimp mixture into each roll.
