Ingredients
1 1/3 c sugar .
5 large eggs, at about room temp .
4 oz bittersweet chocolate .
1/2 c water .
Ganache .
10 oz bittersweet chocolate, cut into small pieces .
1 c heavy cream .
8 oz unsweetened chocolate .
1/2 lb sweet unsalted butter, at room temp cut into small pieces
Directions
Step #1 Preheat the oven to 350 degrees with the rack in the center of the oven.
Step #2 Butter a 9” cake pan (not a springform) & place a circle of parchment or wax paper on the bottom, covering it completely.
Step #3 Butter the paper.
Step #4 Chop both the chocolates into fine pieces & set them aside.
Step #5 Combine the water with 1 c of the sugar in a heavy 1 1/2 quart saucepan.
Step #6 Bring to a rapid boil over high heat & cook about 2 mins.
Step #7 Remove the saucepan from the heat & as soon as possible add the chocolate pieces, stirring until they are completely melted.
Step #8 Then add the butter, piece by piece, stirring to melt it completely.
Step #9 Place the eggs & the remaining 1/3 c sugar in either the bowl of an electric mixer or a regular mixing bowl.
Step #10 For a cake with a crunchy crust: beat the eggs & sugar in the electric mixer until they have tripled in volume.
Step #11 For a smooth top (better for frosting): mix the eggs & sugar only until the sugar dissolves.
Step #12 Add the chocolate/butter mixture to the eggs & mix to incorporate completely.
Step #13 DO NOT OVERBEAT! — this causes nasty air bubbles.
Step #14 Spoon & scrape the mixture into the prepared pan.
Step #15 Set the pan into a slightly larger pan or a sturdy jelly—roll pan.
Step #16 Set both in the oven & pour hot water into the larger pan.
Step #17 Bake for 25—30 mins.
Step #18 Let cool in the pan for 10 mins & then run a sharp knife around the sides to release the cake.
Step #19 Cover up with plastic wrap & unmold onto a cookie sheet.
Step #20 Invert a serving plate over the cake & flip it over, so the plate is on the bottom & the cake on top.

Step #25 Scald the cream.
Step #26 Add the chocolate off the heat, & stir very carefully until smooth.
Step #27 Cool slightly & pour over cake.
