Baked Rice Custard Recipe

Ingredients
  • 1/3 c sugar .
  • 1/4 c sultanas .
  • 2 c water .
  • 2 1/2 c milk .
  • 2 tbsps desert rice or short-grain rice (can use short grain rice, but mum always used desert rice) .
  • 1 tsp vanilla .
  • 3 eggs .
  • 1 pinch salt

Directions
  • Step #1 bring water & salt to the boil.
  • Step #2 slowly add rice.
  • Step #3 boil rappidly uncoered 10 mins.
  • Step #4 drain well.
  • Step #5 beat eggs, sugar & vanilla together, add rice & sultanas.
  • Step #6 add milk slowly, stir this to mix.
  • Step #7 pour this into ovenproof dish.
  • Step #8 stand in baking dish with enough water to come up sides of the dish.
  • Step #9 bake in moderate oven 35 mins.
  • Step #10 slip a long fork under the skin that has formed on top, stir carefully to distribute rice evenly.
  • Step #11 reduce heat to mederalty slow.
  • Step #12 bake a further 15 mins then stir with a fork again.
  • Step #13 cook further 15 to 20 mins, or until set.
