Creole Okra Recipe

Ingredients
  • 1 (16 oz) package frozen cut okra
  • 2 tbsps sliced fresh parsley
  • 1 (16 oz) can sliced tomatoes in juice
  • 1/2 large onion, sliced
  • salt & pepper to taste
  • 2 cloves garlic, minced
  • 1/2 green bell pepper, sliced
  • 3/8 tsp dried thyme
  • 1/4 tsp cayenne pepper
  • 2 tbsps olive oil

Directions
  • Step #1 Heat the olive oil in a large skillet over med-heat/flame.
  • Step #2 Saute the onion & garlic until limp.
  • Step #3 Add the green pepper; cook & stir until tender.
  • Step #4 Drain the tomatoes, reserving juice, & pour them into the skillet.
  • Step #5 Spice up with thyme, parsley, cayenne, salt, & pepper.
  • Step #6 Simmer for 5 mins over med-heat/flame.
  • Step #7 Add the frozen okra, & pour in enough of the reserved juice from the tomatoes to cover the bottom of the pan.
  • Step #8 Cover, & cook for 15 mins, or until okra is tender.
