Cranberry Kuchen Recipe

Ingredients
  • 1/4 c butter, softened
  • 2 c sugar
  • CRANBERRY SAUCE:
  • 1 c cold butter
  • 3/4 c evaporated milk
  • 1 c warm milk (110 to 115 degrees F)
  • 1 tsp salt
  • 1 1/2 c sugar
  • TOPPING:
  • 2 c water
  • 2 (.25 oz) packages active dry yeast
  • 3 1/2 c all-purpose flour
  • 1/4 c sugar
  • 8 eggs
  • 4 c fresh or frozen cranberries
  • 1 egg
  • 3/4 c sugar
  • 2 c all-purpose flour
  • EGG MIXTURE:
  • 1/4 c warm water (105 degrees to 115 degrees)

Directions
  • Step #1 In a large mixing bowl, dissolve yeast in a warm water.
  • Step #2 Add the milk, butter, salt, sugar, egg & 2 c flour.
  • Step #3 Beat until smooth.
  • Step #4 Stir in enough remaining flour to form a soft dough.
  • Step #5 Do not knead.
  • Step #6 Cover & let rise in a warm place until doubled, about 1 hr.
  • Step #7 For cranberry sauce, in a saucepan, bring water & sugar to a boil.
  • Step #8 Add cranberries.
  • Step #9 Reduce heat; cover & let simmer for 10 mins.
  • Step #10 Remove from the heat; set aside.
  • Step #11 For egg mixture, in a bowl, mix the eggs, evaporated milk & sugar; beat well.
  • Step #12 Divide half of the egg mixture between two greased 13-in.
  • Step #13 x 9-in.
  • Step #14 x 2-in.
  • Step #15 baking pans; set remaining egg mixture aside.
  • Step #16 Punch dough down.
  • Step #17 Divide in half.
  • Step #18 Pat each portion over egg mixture in pans.
  • Step #19 Spoon cranberry sauce over dough.
  • Step #20 Drizzle with remaining egg mixture.
  • Step #21 For topping, mix flour & sugar in a bowl.
  • Step #22 Cut in butter until crumbly; sprinkle it over the top.
  • Step #23 Bake at 350 degrees F for 25-30 mins or until lightly browned.
  • Step #24 Cool on a wire rack.
  • Step #25 Serve warm.
