Gluten-free Cornmeal Muffins Recipe

Ingredients
  • 1 1/2 tsps guar gum (or xanthan gum) .
  • 1 1/4 c milk .
  • 1 c gluten-free flour (I use Gluten-Free Flour Blend) .
  • 1/4 c cooking oil .
  • 1 egg, slightly beaten .
  • 1/2 c sugar .
  • 1/2 tsp salt .
  • 1 tbsp baking powder .
  • 3/4 c cornmeal

Directions
  • Step #1 Combine cornmeal & milk in a microwave safe bowl.
  • Step #2 Microwave on high for one min, & let this stand.
  • Step #3 Preheat oven to 400°F Line muffin tin with paper baking c, & spray with oil or non-stick spray.
  • Step #4 Combine remaining dry ingredients in a separate bowl.
  • Step #5 Add egg & oil to cornmeal mixture.
  • Step #6 Add cornmeal mixture to dry ingredients, & stir with a fork until mixed.
  • Step #7 Do not over mix.
  • Step #8 Fill c 2/3 full, & bake for 20 - 25 mins.
