Step #1 Combine cornmeal & milk in a microwave safe bowl.
Step #2 Microwave on high for one min, & let this stand.
Step #3 Preheat oven to 400°F Line muffin tin with paper baking c, & spray with oil or non-stick spray.
Step #4 Combine remaining dry ingredients in a separate bowl.
Step #5 Add egg & oil to cornmeal mixture.
Step #6 Add cornmeal mixture to dry ingredients, & stir with a fork until mixed.
Step #7 Do not over mix.
Step #8 Fill c 2/3 full, & bake for 20 - 25 mins.
