Low Fat Lasagna Favorite Recipe

Ingredients
  • 8 oz lowfat mozzarella cheese, shredded .
  • 1 (6 oz) can tomato paste .
  • 1/2 lb fresh mushrooms, sliced .
  • 10 oz lasagna noodles .
  • 1 tbsp dried basil .
  • 4 oz parmesan cheese, grated .
  • 1 (16 oz) can italian-style peeled tomatoes .
  • 1/2 lb 93% lean ground beef, 7% fat .
  • 1/4 c fresh parsley, minced .
  • 1/4 tsp black pepper .
  • 2 egg whites .
  • 16 oz fat-free ricotta cheese or cottage cheese .
  • 2 garlic cloves, minced .
  • 1 bell pepper, sliced .
  • 1 (8 oz) can tomato sauce .
  • 1 c onions, sliced .
  • 1 tbsp dried oregano

Directions
  • Step #1 Cook the onions, bell pepperr, garlic, & mushrooms until tender in a small amount of water or both.
  • Step #2 Add the ground meat, salt, & pepper.
  • Step #3 Cook until meat loses its red color.
  • Step #4 Drain off any excess fat.
  • Step #5 Add the tomato sauce, canned peeled tomatoes, oregano, tomato paste, & basil.
  • Step #6 Simmer about 1 - 1.
  • Step #7 5 hrs or until sauce has thickened.
  • Step #8 If sauce becomes too thick while cooking, add water as needed.
  • Step #9 In a large pot, bring 8 quarts of water to a full boil.
  • Step #10 You do not need to add oil to the boiling water to prevent pasta from sticking together.
  • Step #11 Add noodles one at a time too boiling water.
  • Step #12 Stir the noodles occassionally while they cook to prevent sticking.
  • Step #13 Cook for 10 to 12 mins or until al dente (still a bit chewy).
  • Step #14 Drain, rinse with cold water & separate noodles.
  • Step #15 Combine ricotta cheese, parsley, egg whites, & half of the parmesan cheese in a separate bowl.
  • Step #16 Preheat oven to 350 degrees.
  • Step #17 Coat a 13 x 9 x 2 1/2 inch pan with non-stick cooking spray.
  • Step #18 Spoon in a thin layer of sauce & cover with a layer of lasagna noodles.
  • Step #19 Next, place a layer of shredded mozzarella & ricotta-parmesan cheese mixture.
  • Step #20 Add some sauce.
  • Step #21 Arrange successive layers in a likewise manner, ending with a layer of noodles.
  • Step #22 Top with remaining sauce & sprinkle with remaining Parmesan Cheese.
  • Step #23 Bake about 30 mins or until heated through & cheese has melted.
  • Step #24 Remove from oven & let this stand for 10 mins before cutting.
