Hawaiian Haupia Cake Recipe

Ingredients
  • 1 1/2 c cake flour .
  • 6 tbsps cornstarch .
  • 1 1/2 tsps vanilla flavoring .
  • 1 tsp cream of tartar .
  • FROSTING AND FILLING .
  • 10 eggs, separated .
  • 1/2 c vegetable oil .
  • 1/4 tsp salt .
  • CAKE .
  • 1 (12 oz) can coconut milk (frozen) .
  • 1/4 tsp salt .
  • 2 c milk .
  • 1/4 c coconut milk or fresh milk .
  • 1/2 c sugar .
  • 1 tbsp baking powder .
  • shredded fresh coconut .
  • 1/4 c water .
  • 1 tsp vanilla flavoring

Directions
  • Step #1 CAKE:.
  • Step #2 Beat egg white & cream of tartar until stiff, but not dry.
  • Step #3 Gradually add 1/2 c sugar; set aside.
  • Step #4 Sift rest of sugar, flour, baking powder & salt.
  • Step #5 Mix well.
  • Step #6 Add egg yolks into mixture.
  • Step #7 Whip egg white mixture lightly into other mixture.
  • Step #8 Use 13x9x3 pan.
  • Step #9 350 degrees, 30-35 mins.
  • Step #10 Cool on rack (invert) 45 mins.
  • Step #11 FROSTING AND FILLING:.
  • Step #12 Combine all ingredients except coconut into saucepan.
  • Step #13 Cook over moderate heat, stirring constantly, until thickened.
  • Step #14 Cool.
  • Step #15 Spread on Haupia Cake.
  • Step #16 Sprinkle top with coconut.
