Uncle Bill's Chicken Barbecued On A Rotissiere Recipe

Ingredients
  • 1/2 tsp fresh ground black pepper .
  • 1 tsp Chinese five spice powder .
  • 4 tbsps extra virgin olive oil .
  • 3 lbs broiler-fryer chickens .
  • 1 large orange, with rind cut into 6 pieces .
  • 2 tsps dried dill weed .
  • 1 sprig fresh rosemary (optional) .
  • 1 tsp granulated garlic powder

Directions
  • Step #1 Remove any parts from cavity (if any) & set aside for other use.
  • Step #2 Wash cavity & the whole chicken with cold water, then dry with paper towelling.
  • Step #3 Weigh the chicken to determine the weight for cooking.
  • Step #4 Sprinkle top inside body cavity with dried dill weed, granulated garlic powder & coarse black pepper.
  • Step #5 Now stuff the cavity with the cut oranges, squeezing them slightly to release some orange juices.
  • Step #6 Insert the rosemary sprig.
  • Step #7 Tie the wings & legs with butcher string to keep them from flopping around when barbecueing.
  • Step #8 Place the chicken over the rotissiere spikes & attach the holder.
  • Step #9 Place the chicken in the centre of the holder.
  • Step #10 Rub or brush olive oil generously over the entire chicken & then sprinkle the five spice powder generoulsy over the chicken.
  • Step #11 Place the chicken in the rotissiere & close the door.
  • Step #12 Set your timer for 15 mins per lb of chicken.
  • Step #13 Therefore, a 3 lb chicken will take 45 mins to barbecue.
  • Step #14 It is not necessary to baste the chicken while it is barbeceuing.
  • Step #15 You may wish to test for doneness.
  • Step #16 Insert a meat thermometre into the breast of the chicken & it should read between 180 - 185°F Do not overcook.
  • Step #17 When the chicken is done, remove onto a plate & remove this from the spit.
  • Step #18 Cover up with aluminum foil wrap & let rest for about 10 mins before slicing.
  • Step #19 The skin of the chicken will be nice & brown & so tasty, that's if you wish to eat the skin.
  • Step #20 You can also use 2 large lemons to give the chicken a nice lemony taste.
  • Step #21 You can use a larger chicken, up to 5 lbs.
  • Step #22 I prefer to use the Ron Popiel Barbecue Rotissiere or the Baby George Foreman Rotissiere.
  • Step #23 Serve with a Curry/Onion Sauce.
