Step #1 In food processor/blender, half of the mint, paprika, the cumin, green onions, puree together parsley leaves, salt & pepper.
Step #2 Transfer to large bowl; beat in egg.
Step #3 Add beef & 2 tbsp water; mix well.
Step #4 Shape by heaping 2 tbsp into small sausages.
Step #5 Thread each lengthwise onto metal or soaked wooden skewer.
Step #6 Place skewers on greased grill over med-heat/flame or under broiler; close lid & grill, turning once, about 12 mins on grill, until no longer pink inside & digital rapid-read thermometer inserted into several koftas reads 160F, 7 mins under broiler.
Step #7 Meanwhile, until crisp, turning once, grill or broil pita breads, about 4 mins; cut into quarters.
Step #8 Combine yogurt with remaining mint & minced parsley.
