Vegan Sugar Cookies Recipe

Ingredients
  • 1/2 c canola oil or safflower oil .
  • 1/2 tsp cinnamon .
  • 1 tsp baking powder .
  • 2 c whole wheat pastry flour or white flour .
  • 1/4 c applesauce .
  • 3-4 tsps vanilla extract .
  • 3/4 c white sugar, preferably vegan .
  • 1/2 c white flour (for dusting)

Directions
  • Step #1 Mix together pastry flour, sugar, baking powder & cinnamon.
  • Step #2 In another bowl, whisk the applesauce, oil & vanilla together until well mixd.
  • Step #3 Pour wet ingredients into dry, & stir this to mix.
  • Step #4 Then knead them into a dough.
  • Step #5 You may have to add some more flour or some of the white flour, to make it dry enough to roll out properly.
  • Step #6 (A bit sticky, of course, but not wet.
  • Step #7 ) Start preheating the oven, 300-350 degrees depending on the heat of your oven- ours is quite hot so I use a slightly lower temperature.
  • Step #8 Roll out the dough (around 1/4 inches thickness) & grab some cookie cutters! Bake on a nonstick or lightly oiled pan for about 10 mins, till just barely golden brown on the bottom edges.
  • Step #9 They will be kinda crunchy if you bake them too much longer.
