Potato Salad W/mustard Dressing Recipe

Ingredients
  • 1 1/2 tsps salt .
  • 1/2 lb bacon .
  • 2 tbsps cider vinegar .
  • 1 tsp black pepper .
  • 2 tbsps cider vinegar .
  • 1 c water (less 2 T water) .
  • 5 lbs red potatoes, peeled & quartered .
  • 2 eggs .
  • 1/2 c fresh parsley, sliced .
  • 1 c granulated sugar .
  • 2 tsps celery seeds .
  • BOILED DRESSING .
  • 1/3 c ballpark mustard .
  • 3/4 c onions, sliced .
  • 1/2 c cider vinegar, plus

Directions
  • Step #1 Place potatoes in boiling water to cover, add 2 tbsps cider vinegar.
  • Step #2 When done, drain & place this in rectangular 9x13 dish.
  • Step #3 Set aside.
  • Step #4 Saute 1/2 lb bacon.
  • Step #5 When crisp, c up & add to dish holding potatoes along with the bacon grease.
  • Step #6 Toss.
  • Step #7 Add to potato/bacon mixture: onion, celery seed, parsley, salt & pepper.
  • Step #8 Toss.
  • Step #9 BOILED DRESSING: In saucepan, whisk eggs,.
  • Step #10 add mustard, whisk.
  • Step #11 add sugar, whisk.
  • Step #12 add cider vinegar, whisk.
  • Step #13 add water.
  • Step #14 Bring to boil.
  • Step #15 Cook & whisk 8-10 mins.
  • Step #16 Toss with potatoes.
  • Step #17 Let sit on counter 3 hrs.
  • Step #18 Stir occassionally.
  • Step #19 Cover up with plastic wrap.
  • Step #20 Yummy, Yummy.
  • Step #21 Good for the tummy.
