Ukrainian Overnight Paska Or Kolach Or Rolls Recipe

Ingredients
  • 1 egg, beaten with .
  • 1 tsp salt .
  • 1 1/2 c melted butter .
  • 1/2 c warm water .
  • 2 lemons, zest of, grated .
  • 1 tbsp water .
  • 10 eggs, beaten .
  • 1 tbsp active dry yeast (1 pkg.) .
  • 2/3 c all-purpose flour .
  • 1 1/2 c warm milk or evaporated milk .
  • 1 1/2 c sugar .
  • 11-12 c all-purpose flour or bread flour

Directions
  • Step #1 In a small mixing bowl, mix yeast & water, stirring until dissolved.
  • Step #2 Add 2/3 c of flour & beat till smooth.
  • Step #3 Cover up with a towel & set aside until doubled & bubbling about 45 mins.
  • Step #4 In a large mixing bowl, salt, sugar, mix milk, lemon rind.
  • Step #5 Stir in butter & eggs.
  • Step #6 Beat in yeast mixture & 4 c of flour until smooth.
  • Step #7 Gradually, add enough flour to make a SOFT, workable dough.
  • Step #8 (You might need less if using bread flour).
  • Step #9 Turn out & knead until satiny about 15 mins.
  • Step #10 Place dough in large greased bowl ( I use two large bowls because this dough rises a lot.
  • Step #11 ).
  • Step #12 Cover up loosely with plastic wrap & towel.
  • Step #13 Set in a warm, protected spot overnight.
  • Step #14 Next morning punch dough down, knead 3 mins, cover & let rest 10 to 15 mins.
  • Step #15 Shape into rolls or braids or pan bread or Paska.
  • Step #16 Place on a greased sheet or pans or (coffee cans for paska)(fill paska 2/3 full).
  • Step #17 Butter coffee cans well & sprinkle with fine bread crumbs.
  • Step #18 I like to spray pans with vegetable spray & sprinkle with bread crumbs.
  • Step #19 Let dough rise for about 30 to 40 mins.
  • Step #20 Brush with egg wash.
  • Step #21 Bake 350 degrees for 35 to 40 mins or until brown.
  • Step #22 Remove & cool on a wire rack.
  • Step #23 Adjust baking time for rolls or kolach.
